charlottesgotalot.com 37 Orrman's Cheese Shop at 7th Street Public Market Rachel Klebaur, Owner Which one item or dish would you recommend off your menu and why? Our Gouda, Plum Chutney and Pickled Green Tomatoes. This grilled cheese sandwich stands out because the combination really surprises and delights those who order it. What is one ingredient we will always — or never — see on your menu? There will always be cheese on the menu! Cheese that is made by hand by someone. What are three words you'd use to describe your cooking or your restaurant? Surprising, satisfying and comforting. What makes your restaurant's atmosphere unique? Because we're located in a public market, the atmosphere is very community-driven. Communal tables encourage people to share the experience of the meal. Guests can choose from different plates from various businesses in the market, so they can create their own menu. The restaurants and businesses also recommend items that will complement a dish selected from another location. Orrman's Cheese Shop at 7th Street Public Market Amélie's French Bakery Mary Jane Wilson, Director of Operations and Executive Chef Which one item or dish would you recommend off your menu and why? Pain perdu (savory bread pudding). Bread pudding is unfamiliar to most people, and when they try it, it is surprisingly wonderful. I love the freedom with flavors it provides, and it can be a full meal — very rich and savory. Who is your chef idol? Is there a chef who has influenced you? Julia Child — her passion and continued learning and teaching about French food is inspiring and comforting. What is one ingredient we will always — or never — see on your menu? Butter — always! What are three words you'd use to describe your cooking or your restaurant? French-inspired, diverse and eccentric. How does the food influence the aesthetic? Both the food and the decor are a creative expression of traditional French style. Amélie's French Bakery
