A simple dish like this is very satisfying and says a lot about what we are doing in the kitchen. We use all organic spaghetti, extra virgin olive oil and tomatoes, and we top it with a sprinkling of freshly grated Parmigiano and Pecorino. What one product should everyone purchase from Zia Pia? A bottle of extra virgin olive oil. is is a must in everyone's kitchen. Great, authentic Italian extra virgin olive oil will add flavor and nutrition, and you can literally use it on any dish! We import ours directly from smaller award-winning producers, and it is the real deal. What culinary trends are you seeing in Charlotte? Not only do we want our food to be traceable, to know where it is coming from, but we want to know what is in it and that it is good for us. As a direct importer, we know the origin of the food we sell, and in many cases our producers have become friends. I also see a lot of creativity in new approaches to ethnic cuisine, local cuisine and authentic flavors. We aren't afraid to blend culinary traditions or to modernize them.
